Cheese and Catalonia are inextricably linked. Cheese are being served as tapas , main course or dessert year round. Catalan cheeses are produced over the entire region of both sheep goat and cow's milk , which helps to ensure a huge selection of excellent cheeses. Which cheese is produced in a given location is determined simply by the animals grazing on the surrounding fields.
Ask the homeowner where the nearest or best small producer lies and get your cheese locally - directly from the manufacturer (incidentally, often at a very attractive price). You can also visit the local weekly market closest to your holiday home. Here you are guaranteed to find a local cheese maker or two that could present some magnificent cheese for your lunch table.
The Manchego stores from 6-12 months
Outside the limits of Spain manchego is probably the most famous Spanish cheese. A real manchego can only be made from sheep's milk and from the Manchego sheep. There are currently produced variations with combinations of sheep and cow's milk. If you prefer a milder manchego it is an excellent alternative. You must also decide whether you want your Manchego (Sec) or between dry (semi-sec). The cheese stores in 12 months and it gives it a solid and dry on the palate with a rich slightly salty flavor. It is perfectly suitable as tapas along with a good ham, olives and salt roasted almonds.

Idiazabal is another goat milk cheese , which has a smoky , rich flavor and a slightly perfumed aroma . It fits perfect with grilled food or a glass of strong red wine and can be recognized by its orange body.

Murcia al vino means ”the drunken goat " and it is also made from goat's milk from Spain's south – east corner. The cheese is stored for 45 days, and twice en route becomes bathed in wine, giving it a beautiful red color and a lovely floral taste. Taste the .. it is an excellent cheese!
Cabrales is one of the world's most powerful blue cheeses
Cabrales is one of the world's most powerful blue cheeses. It comes from the Picos de Europa in northern Spain and is made from a mixture of cow's, goat's and sheep's milk. Cabrales stores in three to six months in limestone caves , where it thrives in the humidity and the cool wind. It is suitable sublime as a dessert, where it is served with a little honey and toasted walnuts or fresh fruit .
